We all know how busy life can get. With an on the go lifestyle, one of the things that we neglect is a healthy eating habit. I made this quinoa salad one weekend that is quick, easy, light, and delicious. It has quickly become one of our favorite dishes.
Cherry Tomatoes, quartered
Cook 1 cup of quinoa. I like to use Trader Joe’s Organic Quinoa because it cooks quickly, about 10-15 minutes. You don’t need to measure the ingredients. Just cut the amount that you desire. Mix the cherry tomatoes, avocado, scallions, cilantro, into the cooked quinoa, drizzle with olive oil, and season with salt and pepper to taste. You can have it by itself or pair it up with beef, chicken, or fish. Enjoy!-c.c.
